The combination of sweet potato and apple is a natural for the Holiday table. The apple adds natural sweetness and lightens the traditionally rich version of candied sweet potatoes. Serves 6
Ingredients:
- 5 medium-sized sweet potatoes
- 1 stick unsalted butter
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
- 3 large baking apples, peeled, cored and thinly sliced
- ½ cup light brown sugar
- 1 cup apple cider
Directions:
Preheat oven to 375° Peel the sweet potatoes and slice thinly. Generously butter a 9×13 ovenproof casserole. Mix together the sugars and cinnamon. Layer the sliced potatoes and apples, sprinkling each layer with both sugars and dotting with butter. Continue alternating layers of potatoes and apples. Dot with butter. Heat the cider to boiling in a small saucepan. Pour the hot cider over the apples and potatoes. Bake at 375 for 40-45 minutes or until very hot and fork tender. Allow to cool for at least 5 minutes before cutting and serving. Serve hot.
