Ingredients:
- 6 sausages, sweet or hot Italian
- 3-4 peppers of different colors, sliced 1/2 inch thick
- 2 onions, peeled, halved and sliced 1/2 inch thick
- 4-5 russet potatoes, peeled, halved lengthwise and cut into 1/2 inch thick slices
- 2 Tbsp olive oil
- salt and pepper to taste
Directions:
- Prick the sausages a few times with the point of a knife.
- Combine all the ingredients on a sheet pan large enough to hold it in one layer, or separate onto two pans.
- Roast at 400 degree for 30 to 45 minutes, turning the sausages and vegetables half way through, until the sausage is done, and the potatoes are nicely browned.
- Serve as is, or in rolls for sausage sandwiches.
