We have more than 20 types of heirloom tomatoes to choose from in the farm store.They have wonderful names like Aunt Ginny’s Purple, Green Zebra and Marvel Stripe. These older tomato varieties are rich in history and flavor.
3 large heirloom tomatoes
6 ears corn
8 oz fresh mozzarella, diced
2 cups basil leaves, torn
3 scallions, sliced
1 garlic clove, minced
1/4 cup white wine vinegar
1/2 cup olive oil
salt and pepper, to taste
Cut the tomatoes in slices and wedges to show off their colors.
Cut the corn off cob.
Combine in a bowl with the mozzarella, scallions, and basil.
In a small bowl slowly whisk the olive oil into the vinegar and garlic and season with salt and pepper.
Combine dressing with the tomato mixture and allow to sit for 10-15 minutes for the flavors to come together.
