A cold soup is a refreshing summer meal. Tomatoes are the main ingredient, but scallions and cucumbers give this soup body and bite.Serves 6
Ingredients:
- 4 large ripe tomatoes
- 2 ½ cucumbers
- 1 large green bell pepper
- 8 scallions
- 2 cloves of garlic
- kosher salt
- ¼ cup red wine vinegar
- 3 cups V-8 juice
- Worcestershire sauce
- Freshly ground pepper
Directions:
Peel, deseed and chop the tomatoes and 2 of the cucumbers into ¼-inch pieces. Wash and trim the pepper and scallions and chop into ¼-inch pieces. In a small bowl, combine finely chopped garlic, 1 teaspoon of salt, vinegar and oil; stir to combine. Combine this dressing with the chopped vegetables and stir in the V-8 juice. Add more V-8 to get the preferred consistency. Season with a dash or two of Worcestershire sauce, salt and pepper. Chill. Slice the ½ cucumber for garnish on top. Serve.
