Ingredients:

  • 2 ½ cups fresh zucchini, sliced
  • 2 ½ cups fresh peaches, peeled and sliced
  • 1 cup parmesan cheese (shredded or grated)
  • 1 tsp kosher salt
  • ¼ tsp ground black pepper
  • 2 Tbsp fresh thyme

Directions:

Preheat oven to 350 degrees. Wash and slice zucchini into rounds. Place layer of zucchini on bottom of a 2-quart casserole dish. Sprinkle with cheese, ½ teaspoon salt, 1/8 teaspoon pepper and 1 tablespoon thyme. Layer with half of the peaches. Repeat zucchini layer, with cheese and spices. Finish with remaining peaches. Cover with foil and bake for 45 minutes or until zucchini is soft.
