Our tender head lettuces, spinach and kale can all be used to make this colorful salad with a bit of crunch and tang from apples, dried fruits and nuts.
Ingredients:
6 cups lettuce or mixed greens
2 apples, sliced thin
1/4 cup red onion, sliced thin
1/2 cup blue cheese, crumbled
1/2 cup dried cranberries
1/4 cup pecans, chopped
2 Tbsp. apple cider vinegar
1 tsp. Dijon mustard
1/3 cup olive oil
kosher salt and black pepper, to taste
Directions:
In a large salad bowl, combine lettuce, apple slices, red onion, blue cheese and dried cranberries. Toss to combine.
In a small bowl, whisk together the cider vinegar and mustard. Add the oil in a slow and steady stream while continuously whisking.Taste and add salt and pepper.
Dress the salad and serve.
