2015 Blueberry Bake Off 1st place winner
Ingredients
Pie crust:
- 1 1/4 cups all-purpose flour
- 2 Tbsp sugar
- 1/2 tsp salt
- 1/2 cup unsalted butter, cubed and cold
- 1/4 cup buttermilk
Filling
- 1 1/2 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup Pureed blueberries (1 cup fresh blueberries)
- 2 Tbsp light brown sugar
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup all purpose flour
Topping
- 2 Tbsp granulated sugar
- 1/4 teaspoon cinnamon
Streusel
- 4 honey graham crackers crumbled into fine pieces
- 1/4 cup light brown sugar
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 Tbsp granulated sugar
- a dash of salt
Directions
Crust Whisk together flour, sugar, and salt Add the butter, use hands to mix into a crumbly dough Add buttermilk until dough barely comes together Refrigerate for at least 1 hour
Baking the Pie Preheat oven to 350 F, Roll dough out until its 1/8-1/4 inch thick Whisk all filling together Press dough into baking tray/pie tin, fill it with filling Mix cinnamon and sugar for the topping, sprinkle it over the pie Bake for 1 hour – 1 hr 15min until center is just set, cool at least 30 min
Streusel Mix graham cracker crumbs, brown sugar and cinnamon Combine with melted butter and vanilla Spread evenly into a pan Sprinkle salt and granulated sugar on top along with more cinnamon bake 15 minutes until lightly brown layer streusel on top of the blueberry sugar cream pie
