Blueberry Bash Bake-Off Contest Winners 2010 Child Winner #2:Isabel Guerrero

Ingredients:

  • ½ cup (1 stick) unsalted butter
  • 2 cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp kosher salt
  • ¾ cup granulated sugar
  • 1 egg 1 tsp vanilla extract
  • ½ cup whole milk
  • 3 cups fresh blueberries

Directions:

Heat oven to 350° and butter and flour a 10” spring form pan. In a medium-sized bowl sift flour, baking powder and salt together. In a stand mixer with a paddle attachment, cream butter and sugar until light and fluffy ( about 4 minutes on medium speed). Reduce to low speed and add egg and vanilla. Start adding flour mixture and milk alternating the two until all has been incorporated. Fold in the berries. Pour batter into prepared pan and add streusel topping on top of cake in clumps. Bake for 60-70 minutes or until cake tester comes out batter free. Let cool for 10 minutes before removing from spring form pan and another 15 minutes before serving.

Streusel Topping Ingredients:

  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup packed brown sugar
  • 1 1/3 cups all purpose flour
  • 8 tsp (1 stick) softened unsalted butter

Preparation Streusel Topping In a food processor, pulse together the dry ingredients. Add butter and pulse until it comes together. Use hands to form clumps and place gently on the batter. Topping can be made by hand by cutting butter into flour with a fork or pastry blender.
