Serves 6
Ingredients:
1 cup golden raisins
½ cup apple cider
½ cup coarsely chopped toasted pecans or hazelnuts
1 Tbsp. light brown sugar
2 cups thick, chunky applesauce
8-ounce vanilla yogurt
1/4 tsp ground cinnamon
Directions:
Combine the raisins and apple cider in a small saucepan and cook over low heat about 10 minutes or until raisins are warm and softened. Remove from the heat and let sit for 10 minutes to cool. Drain
off any liquid that has not been absorbed.
Stir together the raisins, nuts, and brown sugar and set aside.
To serve, divide half the raisin and nut mixture among six stemmed glasses or parfait glasses. Layer the applesauce and yogurt in glasses, forming two to four layers.
Top each serving with the remaining raisin and nut mixture. Garnish with ground cinnamon.
