Makes 12 muffins

Ingredients:

Batter:

  • 2 cups all purpose flour, sifted
  • ½ cup granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp kosher salt
  • ½ cup(1 stick) unsalted butter, cold
  • 2 cups apples, peeled and diced
  • ½ tsp lemon zest
  • 1 egg, beaten
  • 2/3 cup whole milk

Streusel topping:

  • ¼ cup chopped walnuts
  • 2 Tbsp light brown sugar
  • ½ tsp lemon zest

Preheat oven to 425 degrees.

Directions:

Sift together flour, sugar, baking powder and salt into a large bowl. Cut in butter with a pastry blender until mixture is crumbly. Reserve ½ cup mixture for the streusel topping. Stir apple and ½ teaspoon lemon zest into mixture in bowl. Add milk to egg and add to apple mixture; stir lightly until moist. Spoon into 12 greased muffin cups. Blend the ½ cup reserved dry mixture with walnuts, brown sugar and ½ teaspoon lemon zest. Sprinkle over batter in each muffin cup. Bake in oven for 20 minutes or until golden brown. Serve warm.
