Ingredients:
3 tablespoons sherry vinegar
1 tablespoon coarse grain mustard
3 tablespoons olive oil
salt and pepper to taste
1 celery root (about 1 pound) peeled and grated
2 Granny Smith apples, washed and grated
1 bunch scallions, whites and light greens coarsely chopped
1/3 cup coarsely chopped parsley
1/3 cup chopped toasted walnuts
Preparation:
In a small bowl, whisk together the sherry vinegar, mustard and olive oil. Season generously to taste with salt and pepper.
Toss the grated celery root, apple, scallions, parsley and walnuts together in a large bowl. Pour the dressing on top and toss.
